Salmon Tartare with ROE by Ross Deutsch (@thisguycooks)

Prep List

  •  3/4 lb Salmon, sushi grade
  • 1 Avocado
  • 1 Tablespoon capers
  • 1/2 Tablespoon Sesame Oil
  • 1/2 Tablespoon Soy Sauce 
  • 1 teaspoon Yuzu Kosho
  • Lime Zest
  • Uni
  • ROE Caviar

Recipe

  1. Roughly chop capers and set aside
  2. Split avocado and press each side gently through cooling rack over a prep bowl.
  3. Slice fish against the grain into 1/4in cubes and place in a bowl
  4. To the bowl with the fish, add 1/2 Tablespoon sesame oil, 1/2 Tablespoon white shoyu (or soy sauce), 1 Tablespoon chopped capers, 1 teaspoon Yuzu Kosho and mix gently into the fish until well incorporated
  5. Using a small plating ring, layer the bottom with avocado, followed by a layer of the seasoned fish, and repeat until reaching the top of your plating ring
  6. Top with a generous dollop of ROE and Uni
