Salmon Tartare with ROE by Ross Deutsch (@thisguycooks)
Prep List
- 3/4 lb Salmon, sushi grade
- 1 Avocado
- 1 Tablespoon capers
- 1/2 Tablespoon Sesame Oil
- 1/2 Tablespoon Soy Sauce
- 1 teaspoon Yuzu Kosho
- Lime Zest
- Uni
- ROE Caviar
Recipe
- Roughly chop capers and set aside
- Split avocado and press each side gently through cooling rack over a prep bowl.
- Slice fish against the grain into 1/4in cubes and place in a bowl
- To the bowl with the fish, add 1/2 Tablespoon sesame oil, 1/2 Tablespoon white shoyu (or soy sauce), 1 Tablespoon chopped capers, 1 teaspoon Yuzu Kosho and mix gently into the fish until well incorporated
- Using a small plating ring, layer the bottom with avocado, followed by a layer of the seasoned fish, and repeat until reaching the top of your plating ring
- Top with a generous dollop of ROE and Uni
