Citrus and gin allow caviar to shine in this simple and classic cocktail.
- 2 ounces Gin
- 1 oz Lemon Juice
- 1 oz simple syrup
- 1 egg white
- Soda Water
- Mint or Basil Leaf for garnish
Pour soda water into a tall Collins or Fizz glass and set aside.
Add gin, lemon juice, simple syrup, and egg white into a cocktail shaker and shake without ice until egg white is evenly distributed and "fluffy". About 10 seconds.
Incorporate a few ice cubes and continue to shake for another 5-10 seconds.
Strain into prepped glass of soda water.
- Garnish with leaves or lemon slices, and serve with a spoonful of ROE Caviar.
